This role will be located at one of Discovery Land Company’s locations: Driftwood Golf and Ranch Club, set outside of Austin, TX.

Driftwood Golf and Ranch Club is seeking a Food and Beverage Manager to join the Food and Beverage Service Department.

The Food & Beverage Manager is responsible for the leadership and coordination of the F&B Operation. Primarily taking responsibility for all outlets which encompass casual dining to fine dining experiences within the club. He/She will work to maintain and improve operational standards for both in the front of house and back of house to ensure all guests receive exceptional and genuine service at all times, reflective of international luxury service standards. In this role, you will be part of creating the Discovery Land Company experience for our members and fellow employees.

Key Responsibilities

  • Communicating daily with Senior Food and Beverage Manager and Club Management to ensure service standards and goals are met.

  • Complying with prescribed standards in the areas of Austin Public Health for the hospitality industry, TABC, while meeting member expectations. 

  • Controlling beverage, food and labor costs, while developing the highest levels of elevated luxury Hill Country hospitality service to members, guests and prospects.

  • Supervising, leading and communicating effectively with all F&B service team members.

  • Scheduling and revising as needed staffing and willing if needed to act as floor manager/senior server/bartender on a regular basis as the staff grows, occasionally requiring training in order to achieve standard levels.

  • Assisting the Sales and Marketing Team with event planning and execution, with an emphasis on on-site elements and day-of requirements.

  • Developing and implementing Standards of Practice for all F&B service outlets: Golf House, breakfast/lunch venues, comfort stations, in-home dining, boat, picnic meals, etc.

  • Working with Senior Food and Beverage Manager on modifying job descriptions for future F&B new hires, as well as assisting with conducting of  interviews or communicating with HR in order to complete hiring processes for new team members

  • Collaborating on a program for F&B employee training, which includes outlining expectations of interpersonal conduct and appropriate hygiene, appearance and attire when training new team members

  • Creating a system for purchasing and setup of new equipment or small wares for F&B areas.

  • Collaborating with the Senior Food and Beverage Manager on development of a plan for ongoing house purchases, coordinating deliveries and procuring  highest quality local and sustainable vendor accounts.

  • Creating purchase-order guides and a system of monitoring inventories for all F&B service outlets (including both food and beverage items and hard goods).

  • Learning the F&B department code system and begin process of coding items and working with accounting to ensure proper record keeping and adherence to budgets.

  • Training the team on the POS system (TEI).

  • Developing the beverage program, training the appropriate team in wine knowledge, spirits and craft brews. (Collaborative with the Driftwood Downtown team).

  • Creating a signature cocktail menu that focuses on local ingredients, and producing a cocktail recipe “book” for use by Driftwood bartenders in all service outlets

  • Holding daily pre-shift service meetings with FOH F&B Team Members to discuss the day’s activities, events, goals, expectations, challenges and needs.

  • Inspecting F&B service outlets daily prior to opening and again at closing to assess sanitation, organization, and inventory of F&B items, and to determine any maintenance, repairs, or additional cleanup needs.

  • Determining and maintaining financial goals (meeting budgets, minimizing waste and loss, and maximizing revenue) for the F&B department and the Club.

  • Additional duties as requested.


Skills & Qualifications

  • A degree in Hospitality Management preferred.

  • Four (4) or more years in a management role in a fine dining establishment or other related experience.

  • Sommelier Certification from an internationally recognized institution, preferred.

  • Exposure in Food and Beverage standards and management in an luxury or international setting (preferred).

  • Knowledgeable of TABC, HACCP & local food safety standards.

  • Strong proven leadership abilities and vision for quality and excellence in hotel operations.

  • Knowledge of various Operations and POS Software (TEI).

Additional Requirements

  • Positive attitude, professional demeanor, and exceptional communication and interpersonal skills to deliver service to members, guests, and team members.

  • Must be able to work flexible work hours/schedule including evenings, weekends, and holidays. Long hours may be required due to business demands.

  • Ability to work in a team environment.

  • Ability to stay calm and focused during the busiest of times.

  • Ability to read, write, speak, and understand English; additional languages preferred.

  • Ability to meet the physical demands of the position including, but not limited to, working indoors and outdoors in all weather conditions, standing, walking, and moving for periods of greater than eight (8) hours, and lifting and carrying items sometimes greater than fifty (50) pounds.
