Job Description

Prep Cooks perform a broad range of kitchen support activities to support effective and efficient back-of-house (BOH) operations. Key responsibilities involve planning, prepping, setting up and providing quality service in all areas of food production for service periods.   They also perform receiving, storage and maintenance work activities, and may assist with stock counts.

Pay: $15.50 - $18.00 / hour

Job Duties:

  • Performs the full range of food planning, preparation, set-up work, station breakdown, cleaning and sanitation activities to support the production of quality service for all dining, brunch and buffet periods according to established BOH policies, procedures and guidelines, IDPRP manual, and management directives.
  • Prepares and cooks all food items in accordance with established recipes and product sensitivity requirements, specifications from Chef, plate presentation guidelines, and responds to special food requests at the Chef’s direction.
  • Receives, replenishes, and rotates stock according to established BOH policies, procedures and guidelines.
  • Perform the full range of cleaning and sanitation for all kitchen-related items and equipment, designated spaces and waste materials according to established safety and sanitation standards.
  • Maintains knowledge of recipe changes to ensure proper execution of recipe procedures and maintain high quality and consistent food products.
  • As requested by management, performs other work activities, such as stock counts, labeling and signage of products to support safe and efficient kitchen operations.

Education/ Experience/ & Behavior Requirements:.

  • High School Diploma/GED required
  • Current food safety certification, such as ServSafe and SafeStaff

Experience

  • 2 years of experience performing in line cooking or preparation capacity

  • Ability to listen and speak in basic English in order to maintain effective communications in the performance of essential job functions
  • Ability to read and comprehend data sources, recipes and manuals, written work instructions, policies, procedures and other work materials in English in order to perform essential duties in accordance with safety, sanitation and operational standards and trainings
  • Ability to read and follow safety instructions related to the utilization of cutting ware and other safety equipment
  • Skill in the preparation of various recipes

Travel Requirements:

  • Local travel required when considered necessary.

Physical Demands:

  • Frequent lifting, moving and carrying of kitchen ware, cleaning equipment, food boxes, garbage etc. weighing up to 70 pounds in the BOH.
  • Regular and prolonged standing and walking to prepare food, clean work station, move garbage, etc.
  • Occasional ascending/descending stairs across the restaurant to move food items, equipment, etc.
  • Repeating motions that may include the wrists, hands and/or fingers
  • Frequent use of hand to finger motions, handle or feel objects, reach with hands and arms
  • Constant bending, stooping and turning to place dishes in machine, etc.
  • Constant exposure to hot and damp temperature fluctuations
