Job Description

Position Title: Kitchen Manager

Expected Weekly Hours: 40 (off-season) – 50 (peak season)

Overview

Bacio Italiano is seeking a Kitchen Manager to oversee the daily operations of our back-of-house team. The ideal candidate is organized, dependable, and able to manage staff, costs, and kitchen systems in a high-volume environment. This position is less about creating new menus and more about making sure the kitchen runs smoothly, safely, and consistently every day.

Responsibilities

Team Leadership & Training

  • Supervise and support kitchen staff during prep and service.

  • Ensure staff are properly trained on recipes, prep procedures, and sanitation standards.

  • Conduct regular working interviews, provide coaching, and maintain a positive team culture.

Kitchen Operations

  • Oversee food preparation, cooking, and plating to ensure accuracy and consistency.

  • Maintain a clean, organized, and safe kitchen environment.

  • Conduct pre-shift kitchen checks and ensure closing procedures are followed.

Labor & Scheduling

  • Create weekly kitchen schedules by Wednesday, coordinating with the General Manager.

  • Monitor overtime and labor costs, keeping targets in line with company goals.

Inventory & Ordering

  • Track food costs and maintain accurate invoice records using XtraChef.

  • Conduct monthly inventory and help manage waste.

  • Place food and supply orders, compare prices, and maintain appropriate stock levels.

Safety & Compliance

  • Enforce all sanitation and food safety standards.

  • Conduct regular mock health inspections and address any issues promptly.

  • Coordinate kitchen equipment maintenance and repairs.

Qualifications

  • Valid Food Handler Management license.

  • Previous experience as a Kitchen Manager, Sous Chef, or similar leadership role in a busy kitchen.

  • Strong organizational, communication, and staff management skills.

  • Basic computer skills (MS Office, XtraChef, Toasttab preferred).

  • Ability to delegate, enforce procedures, and maintain consistency.

  • Must pass a background check.
