General Positions Summary:

Director of Bakery Manufacturing will focus primarily on oversight of Busch's bakery production in the most cost-effective manner within quality standards. Directly responsible for the management, safety and production activities of the bakery in accordance with Busch's policies and procedures.

Specific Accountabilities:

  • Manage all facets of the production operations, including food safety standards.
  • Create and enhance existing SOPS.
  • Ensures standards for product quality, equipment, and operator performance are maintained and that cost effectiveness standards are used to maximize production.
  • Assesses and adjusts strategies, systems, procedures, performance capabilities, equipment, facilities and associates to enhance production, quality, safety and profitability and aligns resources to deliver against Busch's and regulatory requirements in areas of cost, financial controls, quality, safety and business initiatives.
  • Ensure all waste is recorded to maintain accurate shrink information.
  • Ensure all product is prepared to specifications, including quality, yields, packaging and merchandising.
  • Oversee production scheduling and ensure all orders are going out in an efficient, accurate and timely manner.
  • Manage the ordering of ingredients, raw materials and supplies to meet demand while controlling inventory.
  • Work with Busch's deli management and category management. Maintain a high level of communication with Store Managers and Deli/Bakery Managers.
  • Research and develop new items to build sales including seasonal recipe development and additions to core offerings.
  • Effectively document, communicate and train any new procedural updates to the Central Kitchen team.
  • Interview, hire, train and develop central kitchen associates.
  • Achieve Busch's sanitation, food safety and safety standards. Ensure compliance with all regulatory agencies.
  • Provide solid leadership and guidance to direct reports as well as hourly associates.
  • Maintain professional and technical knowledge by completing educational opportunities, reviewing professional publications, benchmarking state of the art practices and networking.
  • Execute with operational integrity by anticipating problems, taking preventative measures, and adapting to changes that improve our operations or guest experience.
  • Consistently follow Busch's policies and procedures.
  • Share our passion for our products by being familiar with our products and services and actively seeking and sharing that information.

Education, Experience and Skills:

  • Bachelor degree in management, food systems or related field. Culinary degree desired.
  • Minimum 5 years management experience in food manufacturing operations.
  • PCQI certification is required with full knowledge in FDA FSMA requirements for food manufacturing.
  • Understanding and experience of large volume baking equipment and factors driving efficiency.
  • Proficient culinary and baking knowledge to create and test recipes and determine product quality.
  • Proficient management and leadership skills.
  • Proficient organization and planning skills, especially to manage multiple deadlines and projects.
  • Proficient mathematical skills to analyze and calculate data.
  • Proficient communication and interpersonal skills, including written, verbal and listening skills.
  • Proficient computer skills in excel, word and email. Able to learn and use a variety of proprietary applications and technology.
  • Strong analytical, problem solving and decision making skills.
