Position Summary:

The Residential Dining Services Nutrition Programs Coordinator is responsible for providing guidance and expertise as a Registered Dietitian to create and implement nutrition-related programs for Housing & Dining Services. These programs include nutrition promotion, individual counseling services to students, and menu consultation to broaden access for those with allergens and special dietary needs. The position develops and executes nutrition programming, provides nutrition counseling, and conducts menu analysis and consultation. The position serves as a liaison with university departments and campus partners for food, nutrition, and wellness-related programs and services.

Essential Job Duties:

  • Direct, develop, and execute nutrition promotion programs, nutrition promotional classes, nutrition-based programming, food, nutrition, and wellness-related events and programs.  
  • Conduct individual nutrition counseling; determine dietary needs and provide expertise and guidance to prospective and current students; consult with and recommend meal plan exemptions for students with dietary needs.
  • Analyze and evaluate nutritional content of menus and recipes; conduct nutrition data analysis; recommend changes and additions to menus to ensure they are nutritionally balanced and meet the needs of students with dietary restrictions.
  • Consult with dining center managers, senior staff, students, and campus partners to provide nutrition expertise concerning menu offerings; evaluate new products for nutritional content and recommend product selection to broaden access to individuals with dietary restrictions.
  • Conduct and oversee the analysis of nutrient components within food served and make recommendations on nutrition labeling, signage, and special dietary needs based upon current University, state, and federal laws.
  • Create, track, and maintain a yearly budget for expenses related to programming; represent Residential Dining Services on campus committees and councils; mentor interns and student employees.  
  • Perform other duties as assigned.

Supervision:

Two part-time student employees.

Minimum Qualifications:

 Minimum Required Degree:  

  • Possess a bachelor's, master’s, or doctoral degree in human nutrition, foods and nutrition, dietetics, nutrition education, food systems management, or public health nutrition 

Minimum Years of Experience and/or Skills:

  • Hold a current Registered Dietitian certification

Preferred Qualifications:

  • Strong communication and organization skills.
  • Strong collaboration skills, including working with multiple departments/areas within an organization.
  • Experience working with young adult populations.
  • Experience in nutrition promotion, nutrition education, menu analysis, and/or nutrition counseling.
  • Three years of supervisory or mentoring experience
