THE JOB:

As the Senior Restaurant Operations Manager for TAP at MGM Grand, you will lead all aspects of restaurant and culinary operations, serving as a strategic and inspirational leader for both front‑of‑house and back‑of‑house teams. This role is responsible for driving operational excellence, financial performance, and an elevated guest experience, while ensuring full alignment with MGM Resorts International brand standards, policies, and procedures.

THE DAY-TO-DAY:

  • Oversees and leads daily front-of-house (FOH) and back-of-house (BOH) operations, including budgets, productivity, scheduling, inventory control, guest service standards, and the development and execution of menu and marketing strategies to drive both short-term and long-term profitability.

  • Leads FOH and BOH teams with a focus on mentorship, training, and succession planning while upholding the company’s diversity commitment.

  • Owns restaurant’s execution of F&B and/or company-wide initiatives and programs and represents the restaurant in divisional, property or corporate meetings.

  • Promotes a collaborative culture focused on service excellence and quality, facilitating seamless coordination between the kitchen and dining room.

  • Executes and enforces company policies, procedures, and training programs consistently, ensuring adherence to employment laws, collective bargaining agreements, and company standards.

  • Interacts with guests to gauge their satisfaction and manages feedback channels, addressing concerns promptly and effectively.

  • Maintains compliance with health, safety, and sanitation regulations across all operations.

  • Oversees recipe consistency, menu specifications, and delivery standards in collaboration with the culinary team.

  • Drives innovation in menu offerings to align with brand identity and guest preferences.

  • Maintains in-depth knowledge of all food and beverage products, menu items, and equipment necessary to perform duties effectively.

  • Oversees execution of banquet and special event orders, guaranteeing timely and accurate delivery.

  • Oversees staff performance, scheduling, and training; managing cost controls and health standards; and executing initiatives as implemented by property F&B leadership.

  • Maintains high team morale through coaching and development, performance reviews, and recognition.

THE IDEAL CANDIDATE:

  • Bachelor's Degree

  • 2+ Years of Prior Relevant Experience (Work experience as a Chef or Cook)

  • Previous experience working in a banquet kitchen or high-volume restaurant or high-volume restaurant or previous experience in a luxury or fine-dining restaurant.
